I Know What You Missed This Summer
I'm hurt. Crushed, really. No, no, it's ok. I understand. You had more important things to do this summer than refresh your browser constantly in hopes that there was a new recipe to check out. You were probably, oh, camping with your kids or hiking around Europe or running away from a hurricane or something. I'm trying not to take this personally!
Seriously though, I know a lot of folks are just getting back from vacations and settling back in, so I thought I'd share some of my favorite posts from the summer. Check 'em out:
Three easy Korean banchan (side dishes). Bean sprouts with sesame oil, spicy stir-fried zucchini, and squash in sweet soy sauce. The active working time on each of these is about 5 minutes!
Have you ever seared your watermelon before? This is probably my most experimental recipe of the summer.
Coconut rice with black beans, plantains and mango salsa. Because a vegetarian should never run out of delicious ways to make rice and beans!
It turns out that a simple stovetop smoking setup is a great way to flavor the onions which then go into these frijoles charros (Mexican cowboy beans.)
You might not think that tomatoes belong in sushi, but give this a chance. The one-two umami punch of tomato and nori was a real eye-opener for me.
And finally, how about watermelon gazpacho? Cold, with a punch from sweet onions, and supremely refreshing.
I hope you all had a great summer. I know my family and I did! I'm looking forward to sharing lots of exciting new recipes this fall.
Seriously loving the idea of the char grilled watermelon. Would be delicious with a bit of ashed goats cheese. . .
